Making Vegetable stock from scraps

I’ve been having a look around at making stock from all the vegetable waste I just stick in the bin (no food recycling where I am). I found this post: http://simplesavvy.wordpress.com/2009/03/18/eco-sins-saints-scrap-vegetable-stock/ and have been filling my icebox full of peelings ever since. I’m looking forward to giving it a go, has anyone else tried?

  3. I almost always make stock from scratch, didn’t realise it was so unusual. If you concentrate the stock you’ve made by reducing it you can freeze it in ice cube trays which is super handy.
